Fresh Summer Skillet with Beef and Veggies

Ingredients

  • 1 lb. Pound of Ground® Crumbles® Ground Beef with Onions
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 cloves minced fresh garlic
  • Corn kernels from one ear of cooked sweet corn, about 1 cup
  • 1 small zucchini, diced
  • 2 diced tomatoes
  • 1 tablespoon fresh basil, chopped – about 2 leaves (or 1 teaspoon dried basil leaves)
  • ½ teaspoon dried thyme leaves
  • 1 tablespoon butter
  • 2 teaspoons Worcestershire sauce or soy sauce
  • ½ cup grated Parmesan cheese
  • 2 cups cooked rice, prepared according to directions

Instructions

  1. Cook the Pound of Ground® Crumbles® ground beef with onion along with the diced zucchini, according to package directions. Drain.
  2. Add garlic, ½ teaspoon salt and ¼ teaspoon pepper, and cook for 2 minutes.
  3. Reduce heat to low; stir in corn, tomato, basil, thyme, butter and sauce. Cover and cook, stirring occasionally, for 5 – 10 more minutes until the vegetables are tender and warm. Top with Parmesan cheese, salt and pepper to taste, and serve over rice.
