Easy Enchilada Skillet

  • 1 package Pound of Ground® Ground Beef Crumbles®
  • 1 onion, chopped
  • 1 can (15 ounces) black beans
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 ounces) enchilada sauce, optional
  • 1 cup frozen corn
  • 1 ounce taco seasoning mix
  • Serve with tortillas, tortilla chips, or rice
  • Shredded cheese and sour cream for garnish


  1. Prepare Pound of Ground® ground beef according to package directions over medium-high heat, adding in chopped onions until sautéed. Drain drippings.
  2. Stir in black beans, diced tomatoes, enchilada sauce, corn and taco seasoning. Simmer, uncovered, for 5-8 minutes.
  3. Serve with tortillas or tortilla chips, or over rice. Top with shredded cheese and sour cream.
